multiple articles claim the first paper mill in France was founded in 1189 by a Crusader who had spent time as a POW working in a paper mill

It's not quite precisely the same, but the popular 1945s historical novel bu Thomas B Costain, The Black Rose, has the hero introduce the exotic art of paper-making to his home manor on his return from journeying to Cathay. Possibly based on that.
