Thanks for the link to that video! If you haven't read it yet, I recommend HIGH ON THE HOG by Jessica B. Harris, a book tying American cuisine to enslavement, it shows how Africans who knew about rice cultivation were captured and enslaved specifically to create the industry in South Carolina. There's also a recent Netflix documentary that expands on the book.
